1 Cup Cashew Cheese (See Easy Peazy Cashew Cheezy Recipe)
2 Cups Brocolli (chopped)
1 cup pinto beans ( See Crockpot Beans Recipe)
2 cups water (more as needed)

Directions:
This is one of the tastiest ways to use up leftovers I've ever found! MMMM Thick and cheesy brocoli soup.

Boil the water with brocoli in it and cook until tender, about 3 minutes. Slowly add the cashew cheese and beans. Gently stir until warm, about 1-3 minutes. Turn off the fire. Once the soup has cooled slightly, place in blender and blend until smooth and creamy. Make sure to follow your blender manufacturer's instructions about blending heated foods. Once it is blended, serve immediately. This is always a huge crowd pleaser and a great way to combine any leftover veggies and cashew cheese.
