Ingredients:  
1 cup Cilantro
1/2 cup reduced fat Mayo
2 tbsp.. chopped Onions
2 tsp. fresh Lemon juice
24 large Shrimp about 1 lb. peeled and deveined
2 tsp. Olive Oil
1 tsp. Chili Powder
1 tsp. Ground Cumin
1/4 tsp. Salt
1/2 Large Japanese seedless Cucumber cut into 1/4 inch slices

Directions:
Directions:
In a Food Processor add Cilantro, Mayo, Onion and Lemon Juice, process until smooth.

Season Shrimp (Dad's Blackening), heat oil in a pan. Cook shrimp until done.

Cool Shrimp, top Cucumber slices with 1 tsp. of Cilantro Mayo and a Shrimp
