Basic Yeast Dough
4 cups sifted flour
1 c sugar
½ c melted butter
1 tsp salt grated lemon peel
1 envelope yeast dissolved in 2 tbsp warm water
2 egg yolks and 2 whole eggs
⅔ c scalded milk (cooled to lukewarm)

Sift flour and sugar in large bowl, add salt, lemon peel, milk, yeast, butter and eggs in that order and mix as ingredients are added. Knead about 15 - 20 minutes. Let rise in a warm place.

For doughnuts:
Take dough and roll out to about 1 inch thick. Cut with large biscuit cutter. Cover and let rise. Fry in deep hot fat. Drain on paper. Sift powdered sugar over them, glaze with jam, fill with jam or top with favorite icing.

Although these doughnuts have never been served at Polish dinner, Mom always made us doughnuts with biscuit dough. It was always a favorite of all of us. This is the Romanian recipe.

Use this basic dough to create a jelly roll.
When doubled in bulk, divide in 2 and roll out not more than 1/2 in thick. Fill with nut/raisin filling or spread with apricot jam. Roll up and place in a loaf pan greased well. Brush with melted butter or beaten egg white. Cover, place in a warm place to rise again. When doubled in bulk, brush again and bake about 45 mins at 350 degrees.
