1 tsp. lemon juice (per jar)
1 tsp. salt (per jar)

Take red, ripe tomatoes and drop in boiling water for 30-40 seconds. Immediately place in ice cold water, peel should split off. Remove peel, core, and quarter. Place all tomatoes in a kettle and bring to a boil and cook until tender, stirring constantly to prevent scorching. Drain in a sieve. Return the juice to kettle and bring to a boil again. Remove foam that will form on the top as it is boiling. While boiling prepare quart jars with salt and lemon juice. Ladle hot juice into jars, seal, and let cool to seal.
