10-minute Tofu Scramble Recipe

1 block firm tofu
1/2 white onion minced
1 clove garlic minced
1 teaspoon olive/avocado oil
1 cup mushroom sliced
1 red bell pepper diced
1 cup kale chopped
2 tablespoons nutritional yeast
1 teaspoon turmeric
1/2 teaspoon paprika
1/2 teaspoon cumin
1 teaspoon curry powder optional
salt and pepper to taste

Drain the tofu. Cut up the veggies. Pour some avocado oil onto a pan and heat to medium heat. Add onion mushrooms and garlic and saute for 4-5 minutes until tender. Add the kale and cover for 1-2 minutes. Crumble the tofu with hands or fork into bite size pieces and saute for 2-3 minutes. Next, add all the spices and cook until most of the liquid is absorbed, about 2 more minutes.
