VERSIONS THAT ROCK (and don't even need dressing)!:
-Burrito Bowl Salad
-Chili over butter lettuce leaf
-Kale, avocado and roasted tofu
-Lettuce and greens topped with a Black Bean Burrito
-Pickled watermelon rind with lettuce, beans and mixed veggies

Salads can be a big part of the vegan diet. Since there are so many options out there, I decided to give a few helpful hints and incorporate foods and meals from this recipe book. This simplifies things and makes it much easier to get the most use out of your prep and cooking time.
