"Plain fresh bread, its crust shatteringly crisp. Sweet cold butter. There is magic in the way they come together in your mouth to make a single perfect bite."--Ruth Reichl

Ingredients:
1 cup chopped pecans
1 cup granulated sugar
1 cup butter
5 Tablespoons water
3 (1.55 ounce) Hershey chocolate bars, chopped

Directions:
Line a 13 X 9 inch baking pan with wax paper, allowing paper to extend over sides of pan at short ends. Spray wax paper with non stick cooking spray. Spread pecans in an even layer in a 10 X 6 inch rectangle on prepared pan; set aside.

In a 3 quart heavy stainless steel sauce pan, combine sugar butter and 5 tablespoons of water over medium heat, stirring constantly until sugar dissolves. Cook, stirring occasionally, until mixture reaches 310 degrees and is a deep caramel color.

Pour hot mixture in a back and forth motion over the pecans in the prepared pan. Sprinkle with chopped chocolate, spreading and pressing chocolate into mixture with a spatula. Let toffee stand at room temperature to cool completely, and then refrigerate until hardened.

Lift toffee from pan using wax paper as handles, and break in pieces.
