Giblets, if desired (see below)
2 lbs. hamburger
1 lb. ground pork (or pork sausage)
1½ c. diced onion
1 ½c. chopped celery
1½ to 2 loaves of bread or seasoned croutons
water or chicken broth
2 eggs
1 tsp. pepper
2 tsp. sage
2 tsp. thyme
some rosemary (optional)
salt to taste
Optional: rosemary, bay leaves

Directions:

Mix meat, onion, and celery.
Put into a covered roaster and into hot oven.
Every once in a while, pull out and break up any large chunks.

In a large bowl, shred loaves of bread.
Add water or chicken broth (enough to make kind of mushy) and mix.
Add eggs, mix in well.
Add bread mixture to your meat.
Add spices and season to taste.
Cover and put into oven for about an hour.

REAL OLD WORLD STUFFING:
Giblets--boiled a long time with sage, rosemary, thyme. Throw in a few bay leaves.
When cooked through, grind them up and add to bread mixture.
"Sometimes I use seasoned croutons instead of bread, and chicken broth instead of water. I don't usually add salt until it's done, especially if using croutons, broth, and pork sausage, because they are all already seasoned.
