Salad:
5 oz fresh spinach
1 1/2 cups dry small pasta
3/4 cup chopped celery
3/4 cup dried cranberries
1 can (15 oz) mandarine oranges
1 lg granny smith apple
1 tsp lemon juice
1/3 cup chopped pecans

Dressing:
2 TBS apple cider vinegar
2TBS white wine vinegar
2-4 TBS sugar
1/8 tsp paprika
1/8 tsp onion powder
4 TBS olive oil
1/2 TBS poppy seeds

Directions:
Directions:
Cook pasta. Drain & toss with a few TBS dressing.

Prepare dressing: Combine all ingredients except poppy seeds. Blend. Add poppyseeds.

Chill dressed pasta in refrigerator.

In a lg bowl, combine the washed & destemmed spinach with the chopped celery.

Add cranberries & drained oranges.

Slice apples into thin slices.

Toss with lemon juice then add to salad.

Pour dressing over the salad & toss.

Add the pasta & toss.

Add pecans before serving.
