7 cups flour
2 tbsp yeast
3 c. water (luke warm)
⅓ c. oil
1 tbsp salt
1 tbsp anise seed

In a small bowl combine yeast, 1 c. water and sugar.
Stir and let stand for 10 minutes until foamy. In another bowl combine the rest of the ingredients (flour, oil, anise seed & salt). Then add the yeast mixture to the dry ingredients, mix and knead by hand.
Cover loosely with plastic wrap and tea towel and allow dough to rest for at least 1 hour.

Place the ball of dough on an unfloured wooden board and knead dough for 1 min.
Separate the dough into quarters. Cover the ¾ dough you are not using.
Cut each quarter into 16 pieces. Roll each piece of dough into a rope (8 inches long & half inch thick).
Join the two ends together to form a circle. And line them up on a wooden board. Make sure that you press the ends firmly. Place tarralli on a parchment lined cookie sheet.

Bake in preheated oven in 375º F for 10 min. Then lower to 350º for another 10-15 min until golden brown and crisp.
Set oven rack in the centre.
