4 1/2 cups All-Purpose flour
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
1 cup butter
3 eggs
2 cups brown sugar
1/2 white sugar

Filling:
1 1/2 cups dates
1 cup sugar
1 cup water
Directions:
Directions:
In large mixing bowl, cream the butter and sugars together and add the eggs. Next, add the dry ingredients to the creamed mixture and cover. Chill in the refrigerator for 4-6 hours.

While mixture is chilling, make the filling for the cookie. Cook the dates, sugar, and water until thick. Remove from heat and stir in 1 cup of chopped pecans. Let cool completely.

Once cookie mixture is chilled, divide the dough into four parts and roll out 1/4 inch thick sheets on floured foil. Spread each sheet with the filling that was made earlier. Roll the sheets into 4 large jelly rolls and wrap in plastic wrap. Put into the refrigerator overnight.

Preheat oven to 350º and slice each roll evenly. Bake on cookie sheets for 10-15 minutes or until done.

*The wrapped jelly rolls can also be put into freezer to be used as needed.
