1 large pepper, chopped
1 large onion, chopped
½ stick butter
2 lbs. boneless chicken breast
2 cups frozen corn (thawed)
1- 16 oz. jar of salsa
1 cup Pepper Jack Colby cheese
¼ to ½ tsp. garlic powder
Salt and Pepper to taste

Directions:
In a saute pan, melt butter and saute pepper, onion, and garlic until pepper is tender. Add the chicken breasts and brown on all sides. After the chicken is browned, add the salsa and corn.

Cover and simmer on low for 45 minutes-1 hour. Turn off heat and add cheese to melt over chicken.
