12 oz whole-wheat rotini
3 cloves garlic, minced
16 oz peeled and cubed butternut squash
4 oz kale, chopped
1½ T dried thyme
¼ cup olive oil, divided
salt and pepper
1 cup grated parmesan cheese

Directions:
Directions:
Cook pasta in a large pot of salted water, according to package directions. Drain, reserving 2 cups of pasta water.
Put reserved pasta water back in pot and add garlic, squash, kale, thyme and 2 T olive oil. Season with salt and pepper. Bring to a boil then reduce to a simmer, stirring frequently, until squash is tender, about 10 minutes.
Add pasta to vegetables and raise heat to medium. Drizzle with 2 T olive oil, stir to combine and cook another 5 minutes. Serve topped with cheese.
