2 T butter
1 medium onion, sliced
¾ cup white wine (or apple juice)
2-4 cups chicken broth
1 T chopped tarragon
1 lb.baby red potatoes
salt, pepper, cayenne pepper
½ cup heavy cream
1 lb. Rockfish, cut into 1" pieces

Directions:

Melt butter and cook onion until soft. Stir in wine and cook for 2 min. Add chicken broth and bring to a simmer. Add potatoes and cook until nearly tender, about 10 min. Season with salt, pepper and a pinch of Cayenne. Add cream and stir to combine. Stir fish and tarragon into soup, cover and cook for 3 min. Stir gently, reduce heat and cook until fish flakes easily with fork. (about 5 minutes)
