1 Lb (organic) baby carrots
2 Tbsp Basalmic Vinegar
1 Tbsp Honey
1 Tbsp Olive Oil
Minced fresh parsley for garnish (optional)

Directions:
Directions:
Preheat oven to 400 degrees. Spray baking dish with coconut oil spray (or other of your choice). Set aside.

In a bowl, combine the vinegar, honey and olive oil. Add the carrots and toss together. Place carrots in baking dish and pour over any remaining sauce.

Bake in preheated oven for 35-45 minutes, stirring once, until carrots are tender and carmelized.

Garnish with parsley and serve!
