1/2 cup garlic cloves (peeled)
1 cup extra-virgin olive oil
3 pounds Yukon gold potatoes (quartered)
Kosher salt
Freshly grated black pepper
1 cup half and half
2 Tbl. butter

Directions:
Directions:
Preheat oven to 350º.
In a small casserole dish place the olive oil and garlic.
Roast in the oven for approximately 20 minutes (until lightly browned).
Set aside.
Place the potatoes in a large pot of salted water.
Bring to a boil and cook for 20 minutes, until the potatoes are very tender.
Remove the potatoes from the water but reserve 1 cup of the water.
Place the potatoes and roasted garlic in a mixer and blend adding the half and half a little at a time.
Add 2 tablespoons of butter (optional).
Add the potato water to make the mixture smooth.
Add more salt and pepper to taste.
Serve hot.

You can make these potatoes ahead of time. Just heat them up in a oven proof casserole dish at 325 degrees for 20 minutes.
I like to roast a bunch of garlic in the olive oil and have it on hand for many dishes.
The roasted garlic freezes well.
