Ingredients: 1/2 cup garlic cloves (peeled) 1 cup extra-virgin olive oil 3 pounds Yukon gold potatoes (quartered) Kosher salt Freshly grated black pepper 1 cup half and half 2 Tbl. butter

Directions:Preheat oven to 350º. In a small casserole dish place the olive oil and garlic. Roast in the oven for approximately 20 minutes (until lightly browned). Set aside. Place the potatoes in a large pot of salted water. Bring to a boil and cook for 20 minutes, until the potatoes are very tender. Remove the potatoes from the water but reserve 1 cup of the water. Place the potatoes and roasted garlic in a mixer and blend adding the half and half a little at a time. Add 2 tablespoons of butter (optional). Add the potato water to make the mixture smooth. Add more salt and pepper to taste. Serve hot. |

Notes: You can make these potatoes ahead of time. Just heat them up in a oven proof casserole dish at 325 degrees for 20 minutes. I like to roast a bunch of garlic in the olive oil and have it on hand for many dishes. The roasted garlic freezes well.
