3 oz. sweet butter
1/3 cup flour
3 cups warm milk
salt and pepper (to taste)
1 tsp. nutmeg

Directions:
Directions:
Melt the butter in a heavy-bottomed saucepan.
Stir in the flour and cook, stirring constantly until the paste bubbles a bit, but not browned.
Add the warm milk, continuing to stir and let the sauce thicken.
Bring to a boil.
Add the salt, pepper and nutmeg.
Lower the heat and cook, stirring until thickened.
