Egg Sauce & Tomato Sauce

2 lb salted cod fish

Soak fish overnight changing water 2-3 times. Drain water from cod. Put cod in pot with fresh water with peeled potatoes cut in half. Boil until potatoes are cooked. Drain and serve with the following garnishes.

Sides:
hard boiled egg, sliced
egg sauce or tomato sauce
onions sauteed in butter/oil combination
avocado
banana
buttered toast or Johnny bread
mayonnaise
 

Egg Sauce

Make a white sauce and add 4 chopped hard boiled eggs.
White Sauce:
2 tbsp butter
2 tbsp flour
1 cup milk
1/2 tsp salt
a few grinds of pepper

Melt butter in saucepan. Stir in flour and cook over medium heat for 3-4 min. Remove pan from heat and gradually stir in milk. Return to heat and cook slowly until thickened. Add in 4 chopped hard boiled eggs.
 

Tomato Sauce
Ingredients:  
Ingredients:  
1 onion, sliced
4 tbsp butter and/or oil, combination works well
28 oz can chopped tomatoes or 2 lb ripe tomatoes, diced
1 tbsp tomato paste (optional)
1 tbsp dried basil or 2 tbsp chopped fresh basil
1 tbsp dried oregano or 2 tbsp fresh oregano
salt & pepper to taste
1 tsp sugar

Saute onions in butter/oil until softened. Add remaining ingredients and simmer 30 min.
