1 lb. dark brown sugar
2 T strong instant coffee powder
2 eggs
2 cups of flour
1/2 tsp salt
1 cup of semi-sweet chocolate pieces
1 1/2 sticks unsalted butter
1 T hot water
2 T vanilla extract
2 tsp baking powder
1 cup of chopped pecans (can substitute any nut you prefer)
1/2 cup of coconut for the topping if desired

Directions:
Directions:
Heat the brown sugar and butter in a saucepan over medium-low heat until the butter melts.
Dissolve the coffee in hot water and stir into butter mixture. Let cool to room temperature.
Preheat oven to 350º.
Butter an 8X11 baking pan.
When the butter mixture is cool, beat in eggs and vanilla with hand-held mixer.
Sift the flour, baking powder and salt together and stir into the butter mixture with a wooden spoon.
Stir in pecans and chocolate.
Spread mixture evenly in the prepared pan.
Bake until lightly browned. 25-30 minutes. Do not over bake.
Cool completely and cut into 2 inch squares.
