1/4 cup chili powder
1 ½ teaspoons cumin
1 tablespoon coarse kosher salt
2 ½ lbs. pork loin, cut into 2 pieces
4 cloves garlic, sliced
1/4 cup fresh lime juice
1 cups chicken broth
1 tbls parsley

Directions:
Directions:
To prepare pork; mix chili powder, ground cumin, and salt in a large, shallow bowl. Roll the pork in the chili mixture, making sure to coat the entire pork loin.

Add the pork loin to a slow cooker. Pour in chicken broth and lime juice, add the sliced garlic and ½ cup chopped prsley.

Cover and cook on low for 6-7 hours.

Once pork is done cooking remove from the slow cooker and place onto a cutting board or serving plate. Shred pork by pulling apart using two forks. Add the pork back into the slow cooker and stir it in the juices and stir once again.
