2 cans (8 oz) crushed pineapple in juice
2 pkgs. (8 oz each) cream cheese softened
1 cup powdered sugar
1 pkg. (6 serving size) Jell-o vanilla instant pudding and pie filling
¾ cup finely chopped pecans


Graham crackers and/or vanilla wafers

Directions:
1. Drain pineapple well. In a large mixing bowl, beat together cream cheese, powdered sugar and pudding mix with an electric mixer on medium speed until combined.
2. Add pineapple and mix on low until combined.
3. Line bowl with plastic wrap. Add pineapple mixture. Use the plastic wrap to help form the mixture into a ball. Cover and refrigerate overnight.
4. Place chopped pecans in shallow dish, roll chilled cheese ball in nuts to coat.
5. Serve with graham crackers and/ or vanilla wafers.
