6 cups water

1 stick butter

1 teaspoon salt

1 teaspoon season salt

1 1/2 cup grits

1 pound cheese

3 eggs

5 splashes of hot sauce

Directions:
Directions:
-In a medium saucepan, pour water and add stick of butter and salts
-Bring to a light boil
-Add the grits slowly and stir continuously on low heat
-Add cheese when grits begin to thicken (similar to the consistency of boiled pudding)
-Continue to cook and stir, until the cheese it is melted and the grits texture has thickened
-Beat the eggs in a small bowl as if to make scrambled eggs, then put about a tablespoon of the grits into the egg mixture and mix to prevent the eggs from curdling when you add them into the grits
-Add the eggs and splashes of hot sauce and mix well
-Grease a 3 qt baking dish and pour the mixture into the dish
-Bake for 1 hr at 250
