1 boneless, skinless, chicken breast

1 cup long grain white rice (brown rice ok too), cooked as directed with salt in the water

2 eggs, scrambled

1 carrot, shredded

4 green onions, chopped

Olive Oil

Butter or margarine

Soy Sauce

Directions:
Directions:
-Cut chicken breast into bite sized pieces. Heat about two tablespoons of olive oil in a skillet (a wok is great but not necessary)
-Stir fry chicken for about one minute, don’t overcook, it gets rubbery, remove chicken from pan. Add butter to pan and scramble eggs remove from pan
-Heat two more tablespoons of olive oil and add carrots, stir fry for about a minute or so, don’t over cook, add green onions and cook about 30 or 40 seconds more
-Add rice and stir fry until warm about two minutes
-Add the chicken and scrambled eggs and stir until mixed
-Add soy sauce, go easy it just needs a little!
