10-12 lb beef brisket, trimmed
2 cups water
1/2 cup white vinegar
5 slices pickled jalapenos
2-3 T pinto bean seasoning
2 chopped onions


Pinto bean seasoning:
2 teaspoons Kosher Salt
1 Tablespoon Cumin
½ Tablespoons Chili Powder
½ Tablespoons Garlic Powder
½ Tablespoons Onion Powder
½ Tablespoons Paprika
½ teaspoons Sugar

Directions:
Directions:
Heat oven to 450º

Place brisket in a large roasting pan (no rack). Pour in water and vinegar. Top with onions and jalapenos, and sprinkle with pinto bean seasoning.

Cover with foil and roast for 2 hours. Remove foil and inject or baste with juices until tender.

Serve with BBQ sauce.

Injecting juices breaks down the tissues to make the beef really tender. You will be surprised at how close this tastes to smoked brisket.
