Ingredients:  
2 potatoes, cooked or leftover, mashed = 1¼ cups
2 egg yolks
Salt, pepper, nutmeg to taste
3 T. diced grated onion
1 cup turkey meat cooked and chopped
½ cup cheddar cheese, grated
½ cup flour
2 beaten eggs
2 cups fresh bread crumbs, add as needed for frying

Directions:
Directions:
Combine potatoes, egg yolks, turkey, cheese, and seasonings. Mix well, then chill for 45 minutes in refrigerator. Shape mixture into 8 equal-sized cylinders. Dredge each cylinder in flour, then egg, then bread crumbs. Heat oil and fry until golden brown. Serve with leftover gravy.

Can use more turkey and onions.
