2 c DICED POTATOES
½ c DICED CARROTS
½ c DICED CELERY
3 tbsp CHOPPED ONION
1 c WATER
¼ c BUTTER
½ c FLOUR
2 c MILK
½ c MINCED HAM (FULLY COOKED)
½ lb VELVETA (CUBED)
2 c CHICKEN BROTH
1 tsp PARSLEY
½ tsp SALT

COMBINE VEG AND COOK IN WATER UNTIL TENDER. MELT BUTTER, BLEND IN FLOUR, SLOWLY ADD MILK, COOKING AND STIRING TO MAKE A THICK SAUCE. GRADUALLY ADD MILK SAUCE TO HOT VEGETABLES, ADD HAM, STIR UNTIL BLENDED. ADD CHEESE, CHICKEN BROTH, PARSLEY. COOK STIRRING CONSTANTLY UNTIL THICK. DO NOT BOIL!
