Ingredients: 5 or so skinless/boneless chicken breasts 8oz cream cheese 1 small can chopped chilies 1 small onion chopped fine and sautéd in a tablespoon butter 2 cups Mexican shredded cheese 12 corn tortillas 2 cans of green chilé enchilada sauce Below seasonings to taste Salt Cumin Onion powder Garlic powder Chili powder

Directions:Boil chicken breasts and shred them. (If you put them in a stand mixer and set on high it will shred quickly) Then mix in cream cheese ,you have softened and cubed, green chilies and sautéd onion. Add in a small amount of the enchilada sauce and season to taste. In a 9x13 pan, spread some of the enchilada sauce to prevent sticking. Then, add spoonfuls of the chicken mixture into the corn tortillas and roll. Place them in the dish and cover with the remaining sauce. Sprinkle cheese on top and bake for 20-25 minutes on 350°. |

Notes: Sour cream mixed into the green chili enchilada sauce to put on top of the enchilada's is also delicious. Rubbing chicken breast with seasoning (salt, pepper, garlic, cumin) before you cook will also add added flavor.
