½½ cup sugar
1/2 cup vegetable oil
1 ½ cup zucchini, shredded
3 medium over-ripe bananas, mashed
1 egg
2 teaspoons vanilla extract
1 ½ cup all-purpose flour
1 teaspoon cinnamon
½ teaspoon baking powder
½ teaspoon baking soda
1 teaspoon salt

1. Preheat oven to 350ºF
2. Beat the oil and sugar
3. Add the zucchini (you can save this until after step 5 if you don't want your zucchini broken down), bananas, egg, and vanilla, mix until smooth
4. In a medium bowl, whisk the flour, cinnamon, baking powder, baking soda and salt together
5. Add the dry ingredients into the wet ingredients and stir on low until just combined.
7. Grease pan and pour in batter
8. Bake for 40-50 minutes (toothpick will come out clean)

I prefer doughnut hole pans, these I bake for 12 minutes

Her recipe calls for 1 cup of sugar and 1 cup of zucchini, this recipe was amazing, but basically a cake. If you want a popular potluck recipe, stick with the full cup of sugar and reduce the zucchini.
If you are going to remove sugar, you need to add a wet ingredient, I chose zucchini, you could adjust a different ingredient.
