½ cup blueberries
1 tsp. vanilla
1 tsp. low fat margarine
1 pkg. artificial sweetener
1 egg white

Crepe
1 egg white
¼ cup fat-free yogurt
1 slice cubed white fat-free bread
pinch of cinnamon
½ tsp. vanilla

Directions:

Sauce
Combine berries and vanilla is sauce pan. Barely cover with water. Bring to a slow boil (medium heat). Cook uncovered, stir often until consistency of preserves. Remove from heat, add margarine and stir. Cool for 5 minutes. Add pkg. of sweetener.

Crepe
Place in blender. Blend until smooth. Heat a 10" non-stick skillet (sprayed with cooking spray) over low heat. Pour blended mixture in skillet. Brown edges (lifted with spatula). Then turn over cook other side.

Spread fruit on crepe. Roll up, if desired.
