Ingredients: Sauce: 2 T. Vegetable Oil 2 T. Flour 4 T. Chili Powder 1/2 tsp. Garlic Powder 1/2 tsp. Salt 1/4 tsp. Cumin 1/4 tsp. Oregano 2 c. Chicken Stock
Enchiladas: 2 T. Vegetable Oil 1 White Onion 1.5 lbs of Shredded Chicken 4 oz. Can Green Chilies 3 c. Mexican Cheese 1 Package Tortillas Cilantro (optional) Salt and Pepper

Directions:Sauce: Heat oil in pan over medium high heat. Add flour and stir over heat for 1 minute. Stir in remaining seasonings and gradually add stock, whisking constantly to remove lumps. Reduce heat and simmer 10-15 minutes until thick.
Enchiladas: Preheat oven to 350 degrees. Heat oil over medium high heat. Add onion and saute for 3 minutes, stirring occasionally. Add chicken and green chilies and season with salt and pepper. Saute until chicken is cooked/warmed up. Lay out tortillas and spread 2 tablespoons of sauce on each tortilla. Add chicken and put cheese on top. Roll up and place in 9x13 baking dish. Add remaining sauce and cheese on top of tortillas. Back uncovered for 20 minutes and garnish with cilantro if desired. |
