4 Bell Peppers (Any Color)
2 c. Shredded Chicken
1 T. Vegetable Oil
4 Green Onions
2 Garlic Cloves, Finely Chopped
1 tsp. Chili Powder
1 c. Salsa
11/2 c. Cheddar Cheese
Salt and Pepper
2/3 c. Cilantro (opt.)

Directions:
Directions:
Heat vegetable oil in skillet over medium heat. Add chopped green onion and garlic and saute for 2 minutes. Add chicken and chili powder. Toss until chicken is coated. Remove from heat and add salsa and salt and pepper. Stir well. Preheat oven to 350 degrees. While the oven is heating, cut peppers into 2 inch pieces. Spoon chicken mixture over peppers and top with cheese. Bake for 15 minutes or until cheese melts. Remove from oven and top with cilantro, if desired.
