3 cups mashed sweet potatoes
2 eggs, lightly beaten
1/2 cup sugar
1/4 cup butter, melted
1/4 cup milk
1 1/2 tsp vanilla extract

Topping:
3 tbsp butter, melted
1/2 cup brown sugar
1/3 cup flour
Marshmellows

Directions:

1. Preheat oven to 350º
2. Peel sweet potatoes and boil for 12-15 minutes, until soft. Remove from heat and mash.
3.Combine melted butter, milk, sugar and eggs together and mix.
4. Add in mashed sweet potatoes and vanilla and mix well.
5. Spray a casserole dish with non stick cooking spray and spread the potato mixture evenly.
6. In a separate bowl mix together melted butter, brown sugar and flour. Combine using a fork.
7. Spread the topping over the potatoes
8. Bake uncovered for 35min, then add 1 cup Marshmellows and bake for 5 minutes
