2 3/4 cups all-purpose flour (whisked prior to measuring)
1/4 cup unsweetened cocoa powder
1 tsp baking soda
3/4 tsp salt
2 cups white sugar
3/4 cup unsalted butter (softened)
1/3 cup vegetable oil
3 large eggs
2 large egg yolks
1 oz liquid red food coloring
1 1/3 cups buttermilk
1 Tbsp vanilla extract
1 1/2 tsp vinegar
Frosting:
12 oz cream cheese (room temp)
12 Tbsp unsalted butter (room temp)
1 tsp vanilla extract
4 1/2 cups powdered sugar

Directions:

Heat oven to 350. Coat 3 cake pans (8 inch) with butter and add parchment paper to each.

In a mixing bowl add flour, baking soda and salt. Sift in cocoa and combine.
In a separate bowl whip together sugar and butter until pale & fluffy (I prefer stand mixer for this).
Whisk in oil. Add eggs one at a time, mixing just until combined after each (room temp eggs preferred - mix easier). Mix in yolks then red food coloring.
In liquid measuring cup add buttermilk then add in vanilla and vinegar & whisk together before adding to main mixture - add to wet ingredients.
Combine the flour mixture to the wet ingredients gradually. Be sure to scrape down sides and once combined stop mixing (don’t want to incorporate too much air).
Addthe mixture to all three pans. Bake for about 25 -30 minutes. Check first at 25 and add minutes as needed - want a toothpick to come out clean. Let cool in pan for about 10 minutes and then cool on wire rack and put aside while preparing frosting.

Frosting:
Combine butter and cream cheese and mix until fluffy - this takes at least 5 minutes. Add in vanilla and whip. Gradually add the powdered sugar - add a cup at a time and start at lower speed then whip at high speed. Once all combined, whip until fluffy. For ease of frosting, chill in fridge prior to frosting.
