2 cups heavy cream
1/2 fine granulated sugar
1/2 vanilla bean (split in half and seeds taken out)
5 egg yolks

3 Tbl. high brown sugar

Directions:
Preheat the oven to 300º.
Mix the sugar and egg yolks together in a bowl and stir until combined.
* Make sure that you incorporate the sugar as soon as you mix it in or the yolks with burn from the. sugar.
Heat the heavy cream with the vanilla bean pod and seeds to a boil.
Place the mixture in ramekins then in a large casserole dish with three fourths of it filled with water.
Bake for 25-30 minutes until set and a paring knife comes out clean in the center.
Cool and then place in the refrigerator covered for at least 4 hours or overnight.
Just before serving, preheat the broiler to high and sprinkle light brown sugar on top.
Place in the broiler and turn every couple of seconds to brown and turn shiny.
You can also use a blow torch if you have one.
Remove from oven and serve immediately.

This has to be one of my favorite desserts, especially at Christmas. We would serve this when we had our good friends over on Christmas Eve and Alex would always finish this dessert off with a blow torch.
