1/2 cup coffee
1/2 cup boiling water
3 oz. unsweetened chocolate
4 oz. sweet butter (cut into pieces)
1/2 Tbl. pure vanilla extract
2 cups sugar
2 eggs (separated)
1 tsp. baking soda
1/2 cup sour cream
2 cups cake flour
1 tsp. baking powder

Ganache:
10 oz. bittersweet chocolate (finely chopped)
1 1/2 cups heavy cream

Directions:

Preheat the oven to 350º.
Cake:
Grease and flour a spring form or cake pan.
Pour boiling water and coffee over the chocolate and butter: let stand until melted.
Stir in the vanilla and sugar then whisk in the egg yolks, one at a time, blending well after each addition.
Mix in baking soda and sour cream and whisk into the chocolate mixture.
Sift the flour with the baking powder together and add to the batter mixing thoroughly.
Beat the egg whites until stiff but not dry. Fold a quarter of the egg whites into the batter.
Placed the remaining egg whites on top of batter and gently fold together.
Pour into prepared pans and set on the middle rack of oven.
Bake for 40-50 minutes, until the edges pull out from the sides of the pan and a toothpick comes out clean.
Cool in the pan for 20 minutes, unmold and cool completely before frosting.

Ganache:
Place cream in a heavy saucepan and bring to a boil.
Remove from the heat and add the chocolate.
Stir until chocolate is melted and mixture is smooth.
Refrigerate for at least 1 hour.
Beat with an electric mixer until mixture is light and fluffy.
Frost and serve.
