About as many cherries as needed to fill the number of jars you want to make. I find that the tarter cherry varieties work best but any will do

Vinegar

2 tablespoons sugar per jar

Water

Directions:
Wash the cherries. Put into the sterilized jars (pits, stems and all!). Half fill the jars with vinegar, Add the sugar. Fill to the top with water. Seal the jars. I find that if I heat the vinegar and/or water, the jars will seal themselves as the mixture cools.

Place on a shelf for 2-3 months, turning over occasionally, then enjoy.
