• 4 Tablespoons Sugar
• 12 Eggs (large)…if you use extra large, the mousse will be a little grainier
• 1 teaspoon vanilla
• 3 Tablespoons Almond Liquor (almond extract can be substituted – ½ teaspoon)
• 1 Pound Bakers German Sweet Chocolate Bars
• ½ pound sweet butter

Separate the eggs. Beat the yolks with the vanilla, and butter. When thoroughly blended, add the Almond Liquor or extract. Melt the chocolate in a double boiler and then allow to cool, just a bit. Beat the egg whites and sugar until stiff. Blend the chocolate with the butter/yolk mixture, adding the chocolate to the yolk a little at a time. Finally, gently fold the chocolate mixture into the egg whites. Chill until firm.

This may be put in small glasses and chilled. Serve with whip cream and perhaps a sprig of mint or a fanned strawberry if you want to go the whole route…Enjoy

This recipe was introduced to Hal when he worked at Marshall Fields. The Frugal Gourmet was doing cooking demonstrations and this was one of the recipes. Daughter Barb LOVES this.
