5 lbs. pork back ribs - baby back ribs preferred
1/4 cup ground coffee beans (not instant)
3 tbsp packed brown sugar
2 tbsp chili powder
2 tbsp paprika
1 tbsp salt
2 tsp cumin
1/2 tsp cinnamon
1/2 tsp ground ginger (dried)

1. Trim any visible fat from ribs; remove membrane from underside if attached - insert small knife under membrane at one end of the ribs to loosen, then grab and pull towards the other end; the membrane should come off in one long strip. Place ribs on cutting board.
2. Combine ground coffee, sugar, chili powder, paprika, salt, cumin, cinnamon and ginger in a bowl and mix well. Rub all over ribs to coat well. Place ribs on baking sheet, cover and marinate in fridge for 4 hours or up to 24 hours.
3. Place ribs in preheated 250ºF oven and bake for 3 hours.
4. Broil for a few minutes to develop a crust, brushing with your favourite bbq sauce.

Makes 8 servings. You can probably divide this recipe in half for just the two of you. I would make the whole spice mixture and save half for another time. FANTASTIC!
