Ingredients: 2 ounces smoked Gouda cheese, shredded 4 slices bacon, cooked and crumbled 2 slices bacon raw for wrapping 1/4 cup chopped fresh parsley 1/8 teaspoon black pepper
2 (2 1/4 inch thick) center-cut bone-in pork chops 1 teaspoon olive oil 1/4 teaspoon salt ground black pepper

Directions:Preheat a grill or stove top, oven proof (cast iron if you have it) skillet or a stove top griddle to medium high heat. Preheat oven to 350º
In a small bowl, combine the cheese, cooked bacon, parsley, and 1/8 teaspoon black pepper. Lay the chop flat on cutting board, and with a sharp knife held parallel to the board, cut a pocket into the pork, going all the way to the bone, but leaving the sides in tact. Stuff cheese mixture into pocket, and close with a wooden toothpick. Season the meat with salt and more black pepper. Lightly oil the grill grate, skillet or griddle. Grill over medium heat for 5 minutes on each side to get a golden brown. Wrap bacon around the pork chop and put in cast iron skillet in the oven.Bake for 10 mins or until done. Do not over cook and dry out the meat. Let meat rest for 5 minutes before serving. |

Notes: I made this recipe with boneless pork loin cutlets and it turned out very good. Pork, like chicken breast, can get dry pretty easy but the bacon wrapped around it should help keep it moist. If you don't care for smoked gouda, use your favorite cheese.
