8 egg whites
1/2 tsp cream of tartar
2 cups sugar

2 cups whipped cream

8 egg yolks
1 cup sugar
6 Tbsp lemon juice
4 Tbsp lemon zest

Directions:
Directions:
Preheat oven to 275º
Separate eggs
Beat egg whites to soft peaks
Add sugar and beat until stiff peaks form
Spread the meringue in a buttered 9x13 " pan
Bake at 275º for 20 minutes. Raise heat and bake at 300º for additional 40 minutes.
Remove from oven and allow to cool.
Make lemon curd.
Add egg yolks, sugar, lemon juice and zest to medium pan .
Cook whisking constantly until mixture thickens.
Allow to cool.
Spread 1/3 of whipped cream over cooled meringue.
Cover with lemon curd
Finish by covering with rest of whipped cream.
