2 Tbs. butter or margarine
2 Tbs. flour
1 tsp. salt
1 tsp. dry mustard
1 1/2 c. milk
2 c. (8 oz) shredded cheese (use mild or sharp, processed or Cheddar as you prefer)
8 oz. (2 cups) elbow macaroni
1/4 c. buttered bread crumbs
paprika

Directions:
Directions:
1. In saucepan, melt butter.

2. Remove from heat; blend in flour, salt and mustard.

3. Add milk; heat, stirring constantly, until sauce thickens
and is smooth.

4. Add 1 1/2 c. cheese; heat until melted, stirring occasionally.

5. Meanwhile, cook macaroni as directed; drain. Combine with
sauce in a 2 quart casserole; top with remaining cheese,
bread crumbs and paprika.

6. Bake at 375º 20-25 minutes or until nicely browned and bubbly.

Personal Notes:
Ma insisted that cheese be grated fresh from the block so don't use shredded cheese from a bag if you want this mac and cheese to taste like hers. She was adamant that it melted better and made a better sauce. This is probably my kids' favorite dish that she made. It was ALWAYS served when she made BBQ ribs (with garlic bread, of course!)
