1 3/4 lb. chicken
3 c. buttermilk
2 tsp. salt
2 tsp. pepper
2 c. flour
vegetable or canola oil

Directions:
Directions:
1. Combine chicken and buttermilk in large, non-metal bowl. Cover and chill 8-12 hours.

2. Drain chicken and discard buttermilk.

3. Combine salt and pepper. Sprinkle half of mixture over chicken.

4. Combine remaining salt mixture and flour in plastic bag.

5. Place 2 pieces of chicken in bag, shake to coat, remove. Repeat
with remaining chicken.

6. Pour oil to depth of 1/4" in large skillet. Fry chicken in 2 batches in hot oil over medium heat 5-6 minutes on each side or until browned.

7. Place chicken on a wire rack on jelly roll pan. Bake for 30 minutes at 350º or until done.
