8 cups thinly sliced, cored, peeled firm ripe pears
4 cups granulated sugar
3 tbsp chopped crystallized ginger
1¼ cups water

Zest limes; set aside. Juice limes into a large saucepan. Add pears; toss lightly. Add sugar and ginger. Stir until well combined. Cover and let stand at room temperature for 1 hour.

Prepare canner, jars and lids.

In a small saucepan, combine zest and water. Bring to a boil over medium heat and boil, stirring frequently until peel is tender and most of the liquid has evaporated, about 15 minutes. Drain liquid into pear mixture and set peel aside.

Bring pear mixture to a full rolling boil over high heat, stirring frequently. Boil hard, stirring frequently for 15 minutes. Add peel and boil until mixture reaches gel stage, about 5 minutes. Remove from heat and test gel (place a few drops into a small glass bowl and place into the freezer for about 3 minutes. If marmalade in the bowl is the consistency you desire, then proceed to the next step. If not, continue cooking and testing until gel stage you desire is reached.)

Skim off foam and ladle hot marmalade into hot jars, leaving ¼" headspace. Wipe rim, center lid on jar and screw band down until fingertip-tight. Place jars in canner, cover with water, bring water to a boil and process for 10 minutes. Remove canner lid, wait 5 minutes, then remove jars, cool and store.
