4 salmon or trout fillets
3-4 tbsp evoo
1/2 cup orange juice concentrate, undiluted
1/2 tsp orange zest
1/4 cup 35% cream
1 tsp cornstarch
1 tbsp fresh parsley, chopped
1 garlic clove, minced or pressed through a garlic press
garlic salt and pepper

Directions:
Directions:
1. Pat fish dry with paper towels and season with garlic salt and pepper.
2. Heat evoo in frypan on medium until shimmering; add garlic clove, cook for 30 seconds. Add fish and cook 4 -5 minutes on one side then turn over; cover and cook an additional 3 minutes.
3. Mix all other ingredients, pour over fish and cook for another 3 minutes on medium-low with the cover on.
