5 cups sliced potatoes, cooked
1 cup diced celery
1 onion (small to medium) chopped

¼ cup olive oil
2-3 tablespoons vinegar
Dash of sugar
Salt and pepper

½ to 1 cp. mayo

2-3 hard boiled eggs, sliced
Paprika for color
Salt and pepper to taste

Directions:
Combine potatoes, celery, onion.
Mix together oil, vinegar, sugar, salt, pepper; add to potatoes and mix.
Refrigerate a minimum of 12 hours.

When ready to serve, add mayo; Mix all.
Top salad with eggs, paprika, salt and pepper to taste.

This potato salad is an all-time favorite. I think our mother said it was from Nancy Bolle, but I don’t know for sure. We make it for every summer gathering.
