1 large apple
4 tbsp butter
1 tsp cinnamon sugar
1/3 cup flour
1/3 cup milk
1/2 tsp baking powder
1/8 tsp salt
4 eggs, separated

Directions:
Peel, core and slice apple into 1/4" slices, set aside. In a 10" oven safe skillet, over medium heat, melt butter. Stir in cinnamon and 1/4 cup sugar. Remove skillet from heat and arrange apple slices overlapping concentrically. Return skillet to heat, cook over low heat 10 minutes or until apple is tender-crisp. Meanwhile, pre-heat oven to 400ºF. In medium bowl, combine flour, milk, baking powder, salt and egg yolks. Beat egg whites until stiff peaks form, slowly adding 1/4 cup sugar, then fold into yolk mixture. Spread egg mixture over apples in skillet. Place skillet into oven and bake 10 minutes or until golden brown. Invert pan over plate and serve warm.
