1½ cups flour
1 cup white sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
½ salt
⅔ canola or vegetable oil
2 eggs
1 cup finely grated carrot
½ crushed pineapple
1 tsp. vanilla

Directions:
Directions:
Sift flour, baking soda, sugar, salt and spice. Combine remaining ingredients and add to dry ingredients. Blend at low speed until all ingredients are moist. Beat for 2 minutes at medium speed. Bake at 325 degrees for 25 minutes.
