German Pancakes Recipe

1 cup sifted flour
3 eggs
1 1/2 cups milk
1/2 tsp salt
1 Tbsp melted butter
Additional butter for pan

Directions:
Directions:
Put all ingredients into a blender and mix until smooth. Heat a small fry pan, brush with butter and pour in enough batter to cover the bottom. Tip and roll pan to spread batter thinly and evenly. Brown on one side. When top is set, turn pancake and cook until golden on the bottom (30 seconds to 2 minutes.)

To serve: spoon jam or syrup down the center of the pancake from one edge to the other. Roll the pancake into a cylinder. Sprinkle top with powdered sugar if desired. Using your fork, cut bite-sized pieces from the roll and enjoy.

When I was 8, I almost starved. My mom was unable to cook for three months so my Dad took over. He can't cook! But, he could make these delicious pancakes.
