1 dozen eggs, whisked
milk
1 c. chopped ham
3 large potatoes, peeled and diced
Velveeta cheese, cubed
oil
butter

Directions:
Directions:
Heat oil in large skillet and cook potatoes until golden brown. Remove and drain on paper towels. Remove all but 1 T. oil from skillet. Add whisked eggs, a little milk, chopped ham, cooked potatoes and cheese. Cook as if you were making scrambled eggs (stirring and turning over eggs until they are cooked).

Serves 6.

From Pattie: When we were kids, Dad loved to make this for breakfast, especially on Christmas morning. He continued to make it on Christmas mornings after he and Mom moved in with Mike and Jane. Mike continues this tradition on Christmas morning.
