1 Cup Sugar
½ cup Flour
1 Lb Fresh Rhubarb, chopped
2 Pints fresh Strawberries, sliced
1 Pastry for a double crust pie
2 TBSP Butter
1 egg yolk, beaten
2 TBSP white sugar

Directions:
Directions:
Preheat oven to 400º, grease pie plate.
In a large bowl, mix flour and sugar. Add strawberries and rhubarb. Toss and let stand for 30 minutes. Pour Strawberry mixture into prepared crust. Dot with butter and cover with top crust. Seal edges with water. Apply beaten yolk to top of pie with pastry brush. Sprinkle with sugar. Cut small holes in crust to allow steam to escape. Bake 30 min at 425º, Reduce heat to 350º and bake 30 min more, til brown & bubbly, Cool on rack.
